- Steak tartar of matured sirloin steak, on brioche bread with butter. with free-range egg yolk cured in soy. -1-(3)-7-
- Sea bream ceviche on pan bao. -1-4-
- Seafood mellow rice. With red prawns, King prawns, squid and clams. (for lunchtime) -2-4-
- Turbot with black garlic pil pil and “noisette” butter toast. And seasonal mushrooms. -4-7-
- Tataki of duck magret, with homemade demi-glace, pistachio shavings and freeze-dried raspberry. -(1)- (8)-
